Thai Peanut Butter Lime Noodles

Thai Peanut Butter Sauce:

1/2 cup peanut butter (natural, smooth)

1 lime (juice and zest)

1 tsp sesame oil

4 tbsp sweet chili sauce

4 tbsp soy sauce 

1 tbsp maple syrup or honey 

5 cloves garlic 

2 tbsp fresh ginger (grated)

1/4 cup avocado oil (or any neutral oil)

1/2 bunch cilantro 

Method:

blend all together

Spiced Almonds:

1 cup flaked almonds

1 tsp Chinese 5 spice

1 tbsp sesame seeds

1/2 tbsp neutral oil (avocado)

salt

Method:

Toast altogether

Salad Components:

noodles (egg or rice)

carrots

cucumbers

red peppers

bean sprouts

Methods:

-cook noodles to package directions, run under cold water to stop the cooking and cool down

-julienne (cut into matchsticks) the veggies

-combine the noodles, veggies and sauce

-garnish with chives, spiced almonds
