Chicken Gyoza with Sizzling Soy

-image 1, slightly wet the edges of the dumpling wrapper with water and spoon in the filling

-image 2, fold like a taco and pinch the middle together

-image 3, rotate and do the same pinch to create an X in the middle

-image 4, pinch the 4 corners closed

Chicken dumplings:

1 pound ground chicken 

2-4 cups Green cabbage 

1-2 cups shredded carrot 

1 container shiitake mushrooms

1 leek

Large bunch of garden chives 

3 Tbsp Soy sauce

Sesame oil - taste

Salt - taste 

Chili crisp oil - to taste 

Method:

-Finely dice all veg and mix with ground chicken

-season, make a tester patty and pan fry - taste and adjust to preference

-fill wrappers, store bought or homemade 

-on med heat pan fry dumplings in oil until getting golden on bottom, after about two min add water and close lid.

-let steam 2-3 min, then remove lid and let continue to brown and crispy the bottoms until golden

-serve with sizzling soy dipping sauce
