The Ultimate Potato Chip Chocolate Chip Cookies
The only chocolate chip cookie recipe you will ever need. To which you can get creative with, by adding, yup you guessed it…potato chips. Wild. I know. The sweet and salty, crispy and chewy is to die for. Don’t believe me? Try it for yourself.
Ultimate Potato Chip Chocolate Chip Cookies
Ingredients:
225g unsalted butter
200 g granulated sugar
150g dark brown sugar
2 large eggs
1 egg yolk
2 tsp vanilla
330g all purpose flour
1 tsp baking soda
1 tsp salt
300-350g dark chocolate chunks or chips
Optional: salted potato chips (lays) to crunch on top
Method:
-oven 375f (190c) convection setting
-(take the butter out the fridge 5 mins prior to starting and cut into cubes to bring to room temperature)
-combine flour, baking soda, salt in a bowl - set aside
-in stand mixer, cream together butter, sugar, brown sugar and vanilla until light and fluffy - 3ish mins
-add the eggs one at a time + the yolk beating well after each addition
-incorporate the flour mixture in 3 additions- do not over mix
-stir in the chocolate chunks/chips in with a spatula
-use a cookie scoop or two spoons to drop cookie balls onto a prepared baking sheet (with parchment).
-Transfer to freezer for 15 mins - this tip stops them from spreading too much.
-remove from freezer
-Crunch a decent amount of salted potato chips and slightly press them into the cookies (do not flatten the dough ball)
-bake for 9-12 mins - you want them golden and set but slightly under in the middle so they stay chewy
-remove from oven and transfer to a wire rack to cool after 2 min
-sprinkle sea salt flakes on top- this should be done for every chocolate chip cookie in my mind - it brings a plain chocolate chip cookie to the next level.
-Enjoy immediately. 🍪✨
-the potato chip cookies should be eaten fresh or within a day as the chips tend to go soft after two days.
